Instructions: Grease and line two 450g loaf tins with greased greaseproof paper.
Measure all the ingredients into a bowl and beat until smooth. Spoon half of the mixture into each tin. Stand the tins on the grill rack in the lowest position in the large roasting tin. Slide on to the lowest set of runners in the roasting oven with the cold plain shelf on the second set of runners. Bake for about 45 minutes turning halfway through if necessary until pale golden and a skewer comes out clean when inserted. If the cakes are too brown slide in the cold plain shelf on the second set of runners. Cool in the tins before removing. Serve warm or cold. This is an excellent way of using slightly over ripe bananas the ones that sit in the fruit bowl and everyone avoids! This mixture makes two fairly shallow loaf cakes.
