Moist, not rubbery, delicious. 1. Combine dry ingredients and mix well till combined. Add remaining ingredients, stir till dry igredients are just moistened. 2. Coat an 8x4 loaf pan with non-stick cooking spray. Spread mixture evenly in the pan, and bake at 325 F for 40-45 minutes, or just until a wooden toothpick inserted in the ceneter of the loaf comes clean. 3.
