1/4 cup HONEY
1/4 cup DARK RUM
1 tbl MINCED GARLIC
1 x JALAPENO PEPPER, SEEDED AND MINCED
1 tsp SALT
1/2 tsp GROUND CINNAMON
1/2 tsp RED PEPPER FLAKES
1/4 tsp GROUND RED PEPPER
1/8 tsp GROUND NUTMEG

Instructions: MAKES ABOUT 5 CUPS

IN A LARGE SAUCEPAN COMBINE ALL INGREDIENTS OVER MEDIUM HEAT. BRING TO A BOIL. REDUCE HEAT TO LOW, AND SIMMER UNCOVERED, FOR 20 TO 30 MINUTES, STIRRING FREQUENTLY OR UNTIL SYRUPY. TRANSFER MIXTURE TO A BLENDER OR FOOD PROCESSOR FITTED WITH A STEEL BLADE; PUREE UNTIL SMOOTH. REFRIGERATE UNUSED SAUCE UP TO 2 WEEKS.

USES: AS A TABLE SAUCE FOR DIPPING GRILLED SHRIMP, TOPPING HAMBURGERS OR MOST ANY MEAT, CHICKEN OR SEAFOOD.
