Instructions: Cream shortening and sugar until fluffy. Add eggs, one at a time, creaming thoroughly. Combine banana and lemon juice set aside. Sift flour, baking soda and salt 4 times. Add banana mixture, flour mixture, and buttermilk alternately to creamed mixture. Mix until entire batter is light and fluffy. Add vanilla and mix again.
Pour batter into two 8-inch pans, which have been greased, papered with wax paper and floured. Bake at 350 degrees or 30-35 minutes. Cool completely on a wire rack before frosting. FILLING: Mix and spread between layers. FROSTING: Cream shortening and butter until fluffy. Add sugar and milk alternately to shortening mixture, one tablespoon at a time. Make sure sugar is dissolved after each addition. Add vanilla. Mix until frosting is fluffy like whipped cream. Ice cake and garnish with banana slices. Email this Recipe:
