3 lrg bananas
2 tbl thick fromage frais
juice and grated zest of a lime
1 tbl lemon juice
300 ml double cream
150 gm dark chocolate (5565% cocoa solids) chopped
Instructions:
Instructions: Place the unpeeled bananas in the freezer for at least 6 hours.

Remove and leave for about 15 minutes before carefully peeling with a sharp knife (had the banana firmly with a cloth).

Chop the flesh into small pieces and place in a blender with the fromage frais lime and lemon juice and half the cream.

Process until click and creamy stopping the motor a couple of times to stir.

Serve immediately or place in the freezer for 30-45 minutes to firm up.

For the sauce melt the chocolate with the remaining cream and the rum.

Do this over a very gentle heat or in the microwave on a medium setting.

Whisk until smooth and serve at once with the ice cream.

You can serve the ice cream the minute it is made or allow it to firm up a little in the freezer.
