Instructions: Clean the chicken and trim off any excess fat.
Wash the coriander, including the roots and stalks then puree these, reserving a few leaves for garnish. Add the fish sauce, sugar, black pepper, garlic and salt. Put the chicken into a large bowl and add the blended spices. Toss well to coat and leave for two hours or more to marinate. Cook the chicken under a preheated grill or over a hot barbecue. Slice it when cooked with a sharp knife and serve garnished with the reserved coriander leaves. Email this Recipe:
