1 lrg Eel, (2lbs minimum)
Instructions:
Instructions: Cut the fish into 5-6 inch steaks. Season with salt and pepper 20 minutes before putting on a very low barbecue.

Cook very slowly to allow the eel to lose its fat and become crispy.

Serve immediately.
