8 slc boneless pork loin - (abt 3 oz ea) trimmed of fat
Salt as needed
2 tbl olive or vegetable oil
1/4 cup cider vinegar
2 tsp finely-chopped garlic
1 tbl chili powder
1 tsp ground cumin
1 tsp dry mustard
1 tsp honey
Instructions:
Instructions: Preheat a charcoal grill.

To marinate meat: Sprinkle salt over medallions of pork. In mixing bowl, combine olive oil, vinegar, garlic, chili powder, cumin, dry mustard, honey and black pepper. Blend well. Place pork in marinade. Coat well on both sides. Cover with plastic wrap. Let stand in cool place (not refrigerator) for 15 minutes - and no longer, or it will get mushy.

To cook meat: Place medallions on heated grill. Cook for 5 minutes on 1 side, basting often. Turn. Continue cooking, basting often, for 5 minutes, or until done.

This recipe yields 4 servings.
