Ingredients:

MARINADE ----------------
4 x 200 g Swordfish Steaks
1 tsp Dried Rosemary
1 x Garlic, (finely chopped)
1/2 tsp Cayenne
Salt and Pepper
----------------- SAUCE ----------------
200 ml Mayonnaise
4 tbl Chopped Watercress
1 tbl Chopped Capers
1 tbl Chopped Gherkins
1/2 x Lemon, (juice)
Instructions:
Instructions: 1. Mix together all the marinade ingredients together. Place the fish in a shallow dish. Pour over the marinade and leave for 3 hours.

2. Meanwhile blend the mayonnaise with the other ingredients and leave the flavours to develop.

3. Remove fish from marinade and cook on barbecue about 4 minutes each side.

4. Serve with a little sauce on the side.
