Instructions: Heat, enough water in a pan to cover potatoes, to boiling. Salt may be added to water if desired. Add potatoes. Cover and heat to boiling; reduce heat. Boil 20-25 minutes or until potatoes are tender; drain. Cook bacon in skillet until crisp. Drain bacon, reserving fat in skillet. Cook and stir onion in fat until tender. Stir in flour, sugar, salt, celery seed, and pepper. Cook over low heat, stirring constantly, until mixture is bubbly; remove from heat. Stir in water and vinegar. Heat to boiling, stirring constantly. Boil and stir 1 minute; remove from heat. Cut warm potatoes into 1/4 inch slices. Stir potatoes and bacon into hot mixture. Heat until hot and bubbly to coat potato slices. May be served hot or refrigerated for a couple of hours or so and served cold.
