Instructions: In a large covered bowl, beat eggs gently. Add buttermilk. Place chicken in mixture, cover and refrigerate for 2 hours, turning chicken ever so often to evenly coat.
Preheat oven to 400 degrees. Line a 13 by 9 by 2 inch baking pan with foil and light grease it with butter. In a gallon size freezer bag, combine the Bisquick, salt, pepper, and seasoning salt. Shake chicken in flour mixture until evenly coated. Brown chicken in a skillet with olive oil for 6- 10 minutes or until golden brown. Using a slotted spoon, transfer to the pan. Bake the chicken for 10-13 minutes each side until crispy. Serves 4. This goes good with the Hot German Potato Salad. Email this Recipe:
