Ingredients:
Amount Ingredient
1/2 cup warm water
5 tbl dry buttermilk
2 tbl sugar
1 tbl lecithin granules
1 tbl olive oil
1 tsp salt
1 cup bread flour
1 cup whole wheat flour
1/3 cup spelt flour
2/3 cup barley flour
1/3 cup barley or bread flour or spelt flour your choice
1 tbl dough enhancer
1 tbl vital wheat gluten
1 tbl dry whey - (from dairy cheese processing)
Instructions:
Instructions: Place the ingredients in the bread pan in the order recommended by your machines manufacturer. Process on the Basic or White cycle, Medium Crust setting.

Near end of first knead make alterations in the liquid/flour ratio if needed to make a soft moist pliable ball of dough, not too wet, not too dry.

This recipe yields a 1 1/2 pound loaf.
