4 tbl vegetable oil
3 x garlic cloves crushed
1 tbl butter or margarine
1 qt chopped onion
1 whl fresh tomatoes (1 quart )
1 pt canned tomato sauce
1 qt sliced green peppers
6 x bay leaves
2 tbl salt
1 tbl Tabasco brand Pepper Sauce
1 tbl dried oregano
1 tsp Spanish paprika
1 tsp cumin seed
1 tsp curry powder
1 pt dry white wine
Instructions:
Instructions: Mix oil and crushed garlic. In large rondo, heat oil-garlic mixture with butter; saute onion lightly.

Add whole fresh tomatoes and tomato sauce, bring to a boil. Mix in green pepper slices, bay leaves, salt, Tabasco brand Pepper Sauce, oregano, paprika, cumin seed and curry powder. Return to a boil.

Add wine and beer. Reduce heat, simmer about 20 minutes. (Tomatoes should stay whole.)

Grind or puree half of sauce and strain through a china cap. Reserve remaining half of sauce.

This recipe yields 1 gallon.
