Instructions: Easy to make, these delightful brownies are perfect to tuck into a purse, pocket or bag lunch. They freeze well and dont fall apart the way some non egg treats do when transported. They also look normal. Normal, that is, depending on your point of view, (if you know what I mean). Carob is often used as a chocolate substitute, quite unfair to this naturally sweet and healthful little bean. I feel carob should be eaten for its own merits and not as substitute for anything.
15 Minutes To Prepare 30 Minutes To Bake Oil 8"x8" Cake Pan, Lightly Flour Oven Temperature 350 Combine first four ingredients. In separate bowl, blend next three. Pour liquid ingredients in with dry and stir just till evenly moistened, do not over mix. Fold in chopped nuts. The batter will be very thick. Spoon into a well oiled and floured 8"x8" cake pan. Place one nut half into what will be the center of each square, 4 across and 4 down. Bake 350 for 30 minutes. While still hot out of the oven brush tops with honey or agave nectar. When cool cut into 16 squares. If you plan to freeze any portion, do so now. Cookies instead of squares. Drop by tablespoon full onto oiled cookie sheet, top each cookie with raw pecan half or sprinkle with flaked coconut. Bake at 350 for 12 minutes. Use brown rice syrup and stevia in place of honey - or - if on a strict candida diet use 1 cup brown rice milk with heaping tablespoon of agar agar and 1/2 teaspoon stevia in place of honey. Best when eaten with your fingers and a cup of hot mint tea. Note: If candida overgrowth is a concern, use rice milk & agar agar in place of honey & sweeten with Stevia.
