Instructions: Prepare a medium hot fire in the grill. A lightly oiled grilled rack is optional but recommended. Brush the tomatoes with the olive oil or marinade. Grill the tomatoes until tender and grill marked, about 5 minutes. Then flip carefully and grill on the second side until lightly grill marked 1 to 2 minutes more. Avoid overcooking. Remove from the grill, taste and add salt and pepper if needed. Serve hot.
NOTES : I prefer to use plum tomatoes for grilled slices as they hold their shape best but you can use regular beefsteak type tomatoes. The trick is to grill the tomatoes until pretty much done on the first side, then flip and grill very briefly on the second side. Dont overcook or the tomato will fall apart. A vegetable grill rack, which isnt 100 per cent necessary enables you to slip the spatula under the tomatoes without damaging the soft flesh. Email this Recipe:
