Instructions: Beat the egg yolks with sugar and vanilla until very thick and pale.
Beat the whites to stiff peaks and gently fold the yolk mixture into them. Melt the butter in an omelette pan, when hot and sizzling pour in the mixture. Cook without mixing until the base is set. Place under a pre-heated hot grill for 2-3 minutes or until the top is well puffed and golden. Remove from the grill, turn out and serve with the filling of your choice. To make the hot fruit sauce, saute fruit in a knob of butter. Add the rum, cream and clove and gently simmer until soft. Place inside the pancake and roll.
