Ingredients:

1/2 cup onion -- chopped
1/2 cup celery -- chopped
1 tsp garlic -- minced
2 tbl olive oil
7 cup tomatoes -- peeled and chopped
6 oz tomato paste
1 tsp oregano leaves
1 tsp basil leaves
1 tbl sugar
1 tbl salt
1/4 tsp pepper
Instructions:
Instructions: Heat oil in a 3 to 4 quart pot over medium heat. Add onion, celery and garlic; cook for 5 to 7 minutes, stirring 2 or 3 times. Add remaining ingredients and bring to a boil. Cover and reduce heat to low and simmer for 25 to 30 minutes, stirring occasionally. Uncover and increase heat to medium-low.

Boil gently for 15 minutes or until sauce is thick, stirring often. Discard bay leaf. To freeze sauce pack airtight and label.

Makes 8 cups. Use on pizza
or pasta or for quick chili with beans.
