Ingredients:
Amount Ingredient
1 tbl olive oil
1 med onion quartered, and
thinly sliced lengthwise
4 med ripe tomatoes - (1 lb) cut 1/2" dice
4 sm carrots peeled, and
cut into rounds
2 x celery ribs cut 1/2" slices
1 lrg bay leaf
1 tsp salt
1/4 tsp freshly-ground black pepper
Instructions:
Instructions: Place the oil and onion in a large bowl and microwave, uncovered, on High for 3 minutes, or until wilted.

Add the tomatoes, cover the bowl and microwave on High for 10 minutes, or until the tomatoes are soft and the mixture is soupy.

Add the remaining ingredients, cover and microwave on High for 20 minutes, or until the carrots and celery are tender. Remove the bay leaf. Serve immediately.

This recipe yields 3 to 4 servings.
