Instructions: * Note: To decide how much rice to cook: figure that for every 3 cups of cooked rice you should start with 1 cup uncooked.

Put the rice, water and butter in the pressure cooker. Seal the lid and bring to pressure. Cook for 5 minutes. Release pressure. There may be some liquid still not quite absorbed by the rice. Allow to stand for two minutes before stirring to fluff.

This recipe yields 3 cups.

Variations:
Saute: Before putting the rice in the pressure cooker, saute in a hot pan for a few minutes in oil or butter, (omit the butter when pressure cooking) until the rice just starts to change color. Add to the liquid and pressure cook as above.

Different Flavor Combinations: With these basic guidelines you can experiment with different combinations to create a side dish custom made for each meal you prepare. A nice variation on the basic rice recipe is adding a bouillon cube for every cup of water and a few herbs. Some suggestions are:

o Chicken boullion cubes and 1 teaspoon tarragon o Chicken boullion cubes and 1 teaspoon sage o Beef boullion cubes and 1 teaspoon dried thyme leaves o 1 cup tomato sauce (or 1 diced tomato), 1/2 cup grated mozzerella cheese and 1 teaspoon dried basil o Cheesey Rice can be made by stirring in 1/2 cup grated cheese for every 1 cup (uncooked) rice
