1/2 lb cod fillets
1 tbl fresh lemon juice
1 tbl extra virgin olive oil
1/2 tsp dried basil
4 whl plum tomatoes cored, halved
lengthwise and sliced crosswise
4 tbl grated parmesan cheese

Its from the National Fisheries Board,I think. I made it with orange roughy but you could use any firm, white fish like cod or pollack.

Preheat oven to 400 degrees.

Cut cod into serving size pieces. Pat dry. Place lemon juice and olive oil in a baking dish that is big enough to hold all the fish in one layer. Combine. Place cod in dish and turn to coat with juice/oil.

Sprinkle cod with dried basil. Layer tomato slices on fish pieces.

Sprinkle with parmesan cheese. Season with salt and pepper.

Cover dish with aluminum foil. Place in oven and bake for 10-15 minutes, depending on thickness of the fish.

Serve.
