Instructions: Prepare grill for indirect cooking. Coat a grill rack with cooking spray; place on grill.
Combine beef, couscous, onions, egg white, garlic, parsley and pepperoni in large bowl; mix gently but thoroughly. Shape into 4 patties, each 3 1/2 to 4 inches in diameter. Arrange on grill rack. Grill over indirect medium heat until done, 8 to 10 minutes per side, turning once and topping with mozzarella during last 3 minutes of cooking. Place patties on 4 toasted Italian bread slices; top with crushed tomatoes, basil, pepperoncini, and remaining bread slices. Note: For couscous: Bring 3/4 cup water to a boil in a 2-quart saucepan. Stir in 1/4 cup plus 2 tablespoons couscous. Cover and remove from heat. Let stand for 5 minutes. Fluff with fork. Email this Recipe:
