Ingredients:

2 tbl peanut oil
1 cup finely chopped red onion
1 tsp curry powder
Salt and pepper to taste
2 cup basmati rice
1/4 cup apple juice
2 cup water
1 cup fresh or frozen green peas
Instructions:
Instructions: 1. Heat oil in a large skillet over medium-high heat. Add onion, and sprinkle with curry powder, salt, and pepper. Cook 3 minutes, stirring occasionally.

2. Add rice, stirring to coat. Cook for 1 minute, stirring occasionally. Stir in apple juice, mixing well to combine. Stir in water. Cover and lower heat to medium-low. Simmer, tightly covered, for about 40 minutes, until rice is tender and water is absorbed.

3. If using fresh peas, stir them into the rice halfway through the final cooking time. If using frozen, add MC_Busted by Karen C. Greenlee
