7 med baking potatoes to 9
1/2 cup vinegar to 2/3
1/2 cup boiling water to 2/3
1 tsp salt to 1 1/2
1 sm onion finely chopped

Boil 7-9 Medium BAKING Potatoes (whole)

Peel Hot, place in mixing bowl & Mash w/fork Add equal parts vinegar & BOILING water to taste**

(**Approx: 1/2 - 2/3 Cup of each)

Add 1 to 1 1/2 tsp. salt
Add 1 small to medium finely chopped onion

Consistency should be like wet mashed potatoes. Taste it and add a little more water and/or vinegar if necessary (depending on your own individual taste preferences) Mix well & transfer to serving bowl;

Sprinkle with lots of pepper.

Cover and let chill overnight (this is important).
