Instructions: Saute the onions, sausage, Cajun spice mix, and Tabasco brand Pepper Sauce. Hold warm.
For each serving, ladle 2 ounces of the egg into a nonstick omelette pan and cook the egg omelette style until it sets. Top the omelette with 1 1/2 ounces of the onion and sausage mixture and 1/2 ounce of the cheddar cheese. Fold omelette in half, and then into quarters. Place on a biscuit.
