Ingredients:
Amount Ingredient
1 sm onion chopped
1 x carrot grated
2 x garlic cloves minced
1 x jalapeno pepper seeded, minced
2 tsp olive oil
1 can black beans - (15 oz) rinsed, drained
1 can pinto beans - (15 oz) rinsed, drained
1/2 cup salsa
2 tbl self-rising cornmeal mix
1/2 tsp salt
1/2 tsp dried oregano
1/2 tsp ground cumin
Vegetable cooking spray as needed
Adobo Mayonnaise (see recipe)
8 whl -grain buns
Lettuce as needed
Tomato slices as needed
Instructions:
Instructions: Saute first 4 ingredients in hot olive oil in a large nonstick skillet over medium-high heat 8 minutes or until onion is tender.

Mash black beans and pinto beans in a large bowl; stir in onion mixture, salsa, and next 4 ingredients. Cover and chill 30 minutes.

Shape mixture into 8 patties. Place on an aluminum foil-lined baking sheet coated with cooking spray. Coat patties evenly with cooking spray. Chill 30 minutes.

Bake at 400 degrees for 15 minutes or until browned and thoroughly heated.

Spread Adobo Mayonnaise on bottom halves of buns. Top with lettuce, tomato, patties, salsa, and top halves of buns.

This recipe yields 8 servings.
