8 x flour tortillas 6 inch
1 cup chopped onion
2 tbl water
1 can nonfat refried beans (16 ounce)
1 can green chili pepper (4 ounce) drained
and diced
several dashes bottled hot pepper sauce
3/4 cup monterey jack cheese lowfat, shredded
3 cup lettuce shredded
Instructions:
Instructions: Wrap tortillas in foil. Heat in 300 degree oven about 10 minutes to soften.

Meanwhile cook the onion in the water in a medium saucepan until tender.

Do
not drain. Stir in the refried beans, diced green chilli peppers, and hot pepper sauce. Cook and stir until heated through. Spoon about 1/3rd cup of
the bean mixture onto each tortilla just below the center. For each burrito
sprinkle about 3 Tbl of the cheese atop the bean mixture; roll up tortilla.

Place on a foil-lined baking sheet. Bake, Loosely covered, in a 350 degree
oven about 10 minutes or until heated through. To serve, place 3/4 cup of the shredded lettuce on each plate and top with 2 burritos. Serve with the
salsa.

Makes 4 servings.
