Instructions: Saute first 4 ingredients in hot oil in a large skillet over medium-high heat 3 minutes; add mushrooms and saute 4 minutes. Stir in diced tomatoes and next 6 ingredients; bring to a boil. Reduce heat and simmer, stirring occasionally, 25 minutes.
