Basic Red-Wine Marinade see * Note
1/2 cup Vinegar
1 tsp Salt
Seasoned flour
1 x Egg
Olive oil
Seasoned bread crumbs
Instructions:
Instructions: Marinate tail in Basic Red-Wine Marinade for 24 hours; dry. Simmer in water to cover with vinegar and salt until nearly done. Dry again and dust with seasoned flour, then dip in egg beaten with a little olive oil, then into seasoned bread crumbs. Put onto a greased rack and pour on 3 tablespoons melted butter. Roast at 350 degrees until browned and done.
