3/4 lb mushroom Sliced
1/4 cup butter
4 slc bacon chopped
2 lb boneless beef In 2" Cubes
2 tbl flour
2 x cloves garlic crushed
6 oz tomato paste divided
1/4 cup dry red wine or more
2 x beef bouillon cubes
2 tbl sugar
1/4 tsp salt
1/4 tsp thyme
1 sm bay leaf
4 x peppercorns
Instructions:
Instructions: In large pot, saute mushrooms in butter; remove mushrooms and set aside.

Fry bacon until crisp; remove and set aside. Add meat to drippings and brown well.

Blend in flour. Add garlic, 2 tablespoons tomato paste, wine, and seasonings. Cover and simmer for 2 hours, stirring occasionally. Add onions, mushrooms, and bacon; simmer 1 hour longer. Add additional wine if liquid has evaporated as well as the remaining tomato paste.E . Garnish with cherry tomatoes and serve over rice if desired.
