3 lb boneless beef that has been cut into 1 1/2 inches thick
2 lrg carrots, sliced
1 med onion, sliced
1 tsp salt
1/4 tsp pepper
3 tbl flour
2 can beef broth
2 cup burgundy wine
1 tbl tomatoe paste
2 x gloves of minced garlic
1/2 tsp thyme
1 med bayleaf
1/2 tbl butter/margerine
2 tbl olive oil
4 cup sliced mushrooms
Instructions:
Instructions: Brown meat in bacon drippings or oil. Add the carrots and onions. Add the salt , pepper, and flour-stirring the whole time. Add broth, wine, tomatoe paste, and the herbs. Cover and simmer, DO NOT BOIL. Quarter the mushrooms and saute in the butter and oil for about 5 mins. When ready to serve the meal, add the mushrooms, and onions to the meat and then thicken. Stir over low heat until it is thickened. Serve over rice or noodles.
