4 lb brisket
Hot water
1 tbl salt
1 qt sauerkraut
1/4 tsp pepper
1 cup vinegar, mild
3 tbl brown sugar
1 med potato, grated
Instructions:
Instructions: Cover brisket with water; season. Simmer for 1 hour to 1 1/2 hours. Add sauerkraut, vinegar and brown sugar. Cook 1 hour longer. Add potato and caraway seed. Cook 10 minutes longer.

Yeild 6 to 8 servings.
