500 gm rump steak cubed
3 tbl barbecue sauce
12 x wooden skewers soaked in water
1 tub plain yoghurt (200 g )
1/4 cup chopped fresh parsley
italian rice
1/4 cup olive oil
1 x onion sliced
1 x clove
2 x flat mushrooms sliced
1 x eggplant cubed
1 can chopped tomatoes (400 g )
2 cup long grain rice
Instructions:
Instructions: Marinate beef cubes in barbecue sauce in the fridge. Heat oil in frying pan with lid. Add onion, garlic, mushrooms and eggplant. Cook until eggplant is soft. Add tomatoes, rice and enough water to cover. Bring to boil then simmer until rice is cooked, adding more liquid if necessary. Season to taste with pepper. Meanwhile thread meat on to a skewer then grill or barbecue kebabs. Serve kebabs on a bed of vegetable rice topped with yoghurt and parsley.
