1 cup	Leftover beef thinly sliced
6 med	Potatoes boiled and sliced
4 x	Tomatoes peeled and sliced
1 tsp	Salt
1/4 tsp	Pepper
2 tbl	Wine vinegar
4 tbl	Vegetable oil
1/2 tsp	Dried tarragon leaves
1 tbl	Chopped parsley

Instructions:

Instructions: In salad bowl, combine beef, potatoes, and tomatoes.

In mixing bowl, combine salt, pepper, vinegar, oil, and tarragon. Mix well. Pour over salad. Sprinkle with parsley. Decorate with egg slices.

Suggested Wine: A light red wine; chilled dry white wine; or a rose wine.
