Ingredients:

50 gm mint
25 gm parsley
2 tsp dijon mustard
2 clv garlic peeled and chopped
5 x anchovy fillets
the juice of 1/2 lemon
extra virgin olive oil
Instructions:
Instructions: Place the first 5 ingredients in a food processor (or use a mortar and pestle) and process briefly then add the lemon juice and about 4 tbsp oil enough to make a thick sauce.

Season to taste.

Grill or barbecue the sausages and serve with a dollop of sauce.
