This recipe calls for a beef cut -- chuck-eye steak - thats new to the meat
case.
1/2 lb boneless beef chuck-eye steak, cut 1 inch thick (4 steaks)
----------------- Marinade: ----------------
2 tbl dry Caribbean jerk seasoning
2 tbl vegetable oil
1 tbl lime juice
Salt and pepper to taste
----------------- Salsa: ----------------
2 x mangoes, diced
1/2 cup chopped green bell pepper
1 tbl chopped fresh cilantro
Instructions:
Instructions: Place steaks in a re-seal-able plastic bag or glass dish. Combine 2 tablespoons jerk seasoning, oil, lime juice, salt and pepper; pour over steaks.

Seal the bag or cover the dish and marinate in refrigerator for 1 to 6 hours, turning occasionally. Remove steaks from marinade and place on grid over medium coals. Grill 14 to 20 minutes for medium-rare (135 degrees F) to medium (145 degrees F), turning once.

To make salsa: While steaks are grilling, combine mangoes, green pepper, cilantro and 1 1/2 teaspoons jerk seasoning, tossing lightly. Serve steaks with salsa.
