Instructions: Fry off the shallots in the butter. Add the beef and brown for 4-5 minutes. Add the flour and cook. Add the coriander and thyme and mustard. Add the beer and cover the meat. Simmer gently for 11/2 hours approximately. Remove the meat and keep warm.
