Instructions: 1. Partially freeze meat until its firm but not hard (about 30-45 minutes).
Thinly slice meat across the grain into bite-sized strips. 2. In a small bowl, combine Orange Sauce ingredients and set aside. 3. Spray a wok or 12" skillet with nonstick spray. Heat over medium-high heat. Stir-fry onions and garlic for 1 minute; remove from wok. If necessary, add 1 tbs oil. Stir-fry meat for 2-3 minutes or until done. Push meat away from center of wok. 4. Stir Orange Sauce and pour into center of wok. Cook and stir until thickened and bubbly. Stir in spinach, water chestnuts and onion/garlic mixture. Cover and cook for 1 minute. Serve over rice.
