Ingredients:
Amount Ingredient
2 x thick beef tenderloin steaks
2 x bacon strips, partially cooked
2 slc bread
2 tsp butter
1 tsp whole-grain mustard
oil for frying
MUSHROOM FILLING
1 tbl butter
4 x green onions, chopped
3/4 cup chopped mushrooms
1 clv garlic, crushed
2 tbl stale bread crumbs
Instructions:
Instructions: Cut a pocket in the side of each steak, fill with Mushroom Filling. Wrap each steak in bacon, secure with toothpick. Spread bread with combined butter and mustard, toast on oven tray in 375 degrees oven about 10 minutes. Fry steaks quickly in a little oil until browned well on both sides, reduce heat slightly, cook until done as desired. Remove toothpick, serve steak on the croutons.

Mushroom Filling: Heat butter in pan, add green onions, mushrooms, and garlic. Cook 5 minutes, stirring constantly. Stir in bread crumbs and lemon rind.
