Instructions: Brown beef, sprinkled with salt and pepper, over medium heat. Add a few tablespoons wine if the beef sticks to the pot, but allow the wine to evaporate. Add garlic and mushrooms stirring until the mushrooms begin to soften. Add peppers, onions, zucchini and tomatoes. Add salt and pepper to taste. Stir to combine all ingredients. Cover and cook over medium heat until the vegetables give up their juices and begin to boil. Add gravy and water.
Bring to a boil. Add dried noodles. (add additional water, if needed) Allow noodles to boil until cooked. Taste for salt and pepper. Add additional wine for flavor and cook another 5 minutes. Serve in a bowl with parmesan cheese. Alterations could include: broth for gravy or water or both, additions of other vegetables, and it occurred to me that adding something like a small amount of white beans would also be nice.
