Instructions: 1. Combine steak, tamarind, garlic, chilli, sugar and juice in bowl; cover, refrigerate 3 hours or overnight.
2. Heat wok, add oil then onion, stir-fry until tender; remove from wok. 3. Add steak to wok in batches, stir-fry until just tender. 4. Cut chives into 2" lengths. 5. Return beef and onion to wok with chives; stir-fry until chives are soft. Uncooked marinated steak suitable to freeze. Not suitable to microwave. Tamarind concentrate is a ready-to-use paste extracted from the tamarind bean, available from Asian food stores. Steak can be marinated a day ahead; recipe best made close to serving.
