2 tsp Vegetable oil
4 tsp Curry powder
4 tsp Minced fresh ginger
1 tbl Minced garlic
1 lb Lean ground beef
1/2 tsp Salt
4 cup Cauliflower florets
3 cup Finely chopped zucchini
1 pkt Frozen peas, 10 oz
1 cup Chicken broth
1 lb Gnocchi, cooked according to package directions
Instructions:
Instructions: Heat oil in large skillet over medium-high heat. Stir in curry powder, ginger and garlic; cook 30 seconds. Stir in ground beef and salt; cook, stirring, until browned. Add cauliflower, zucchini, peas and chicken broth.

Cover and cook until vegetables are tender, 10 minutes. Toss with hot gnocchi and mint in serving bowl.

Makes 6 servings.
