Whisky and prime beef are two of scotlands best products. In this recipe they combine well to make a wonderful specialoccasion main course. Because the meat is cooked quickly use a good sirloin steak for flavour and tenderness. Have the largest frying pan possible available. Batches of meat can be kept warm in the simmering oven after cooking, then returned to the pan when the liqueur and cream are added.

Serves 4 but can easily be multiplied to serve 12 or 16.

Serves 4
