4 x beef tenderloin filets
----------------- SALSA ----------------
2 lb tomatoes peeled, seeded,
and finely diced
1 x yellow pepper seeded, and
finely diced
1 x green pepper seeded, and
finely diced
1 x red onion finely diced
3 x garlic cloves finely minced
3/4 cup cilantro coarsely chopped
2 tsp fresh red hot pepper finely minced
1/4 cup olive oil
2 tbl balsamic vinegar
Instructions:
Instructions: To make the salsa, mix all ingredients together in a large bowl. Grill the beef filets to desired doneness, and serve topped with the salsa.

The recipe makes enough salsa to serve about 10. Use as much as you need, and keep the rest in the fridge for up to a week.

This recipe yields 4 servings.
