1 tbl salad oil
1 x beef chuck underblade steak (about
3 lb ) cut 1 inch thick
1/4 cup all-purpose flour
2 lrg celery stalks, diced
1 med green pepper, diced
1 med onion, diced
1 x 16-ounce can stewed tomatoes
1 tbl sugar
1/2 tsp salt
Instructions:
Instructions: In 8-quart Dutch oven over medium-high heat, in hot salad oil, cook chuck steak until well browned on both sides. Remove meat and into hot fat, stir the flour, stirring constantly until flour is dark brown (mix- ture will be thick). Add the celery, green pepper and onion; cook over medium heat until vegetables are tender, about 10 minutes. Add the tomatoes, sugar, salt and pepper sauce. Add meat and cook
