Author: The Everyday Kitchen 1 Preheat broiler to 375 F(175 C). Heat the onion, garlic and oil in a saute pan over medium heat; cook until translucent. Stir in mushrooms (we called for shiitake mushrooms, but just about any variety will work) and cook until soft, about 4 minutes. 2 Stir in the tomato paste and cook, stirring constantly, for 30 seconds. Stir in the tomatoes, chili flakes, and sugar. Stir in 1/2 of the beer and bring to a simmer; cook until moisture has evaporated, about 20 minutes. 3 Combine the beef, Worcestershire sauce, and half the salt and pepper in a large bowl. While mixing the meat, add the remaining beer as needed. Drink the rest. Shape the meat into 4** equal balls. 4 Flatten the balls with your palms. Use your thumbs to shape the sides. The patties should be of an even 1-inch thickness. Broil burgers to desired degree of doneness, 5-6 minutes for medium. 5 Adjust the seasoning of the relish with remaining salt and pepper. Place each burger on a bun and serve with the tomato relish and fixins of your choice. **Measurement specific to original recipe yield of 4 servings. Email this Recipe:
