Put all ingredients in a screw topped jar and shake well to blend before using. Drain beetroot and place in a salad bowl. Finely grate the orange rind and mix with the dressing. Peel the pith from the oranges and break into segments. Add to the beetroot. Pour the dressing over and toss thoroughly. Sprinkle with chopped parsley to serve. Serves 4.
