Instructions: Drain beets, reserving 1/2 cup liquid. Combine beets, reserved beet liquid, pineapple, and vinegar in a 2-quart saucepan. Stir together sugar and cornstarch; add to beet mixture. Cook over medium heat until clear and thickened. Serve hot, or chill and serve cold.
