1 x cucumber - (6 oz) peeled, and
halved horizontally
2 tbl reduced-fat cream cheese
2 tsp lite mayonnaise
1/4 tsp instant minced onion
1/4 tsp lemon juice
1 dsh hot pepper sauce
1 dsh green food coloring - (to 2)
Instructions:
Instructions: Remove any large seeds from the cucumber with a spoon and grate the flesh with a standard grater into a small bowl.

Add the remaining ingredients except the bread and mix until fairly smooth and easy to spread. Refrigerate the filling for 1 hour.

Spread the mixture on the toasted whole-grain bread. Cut into quarters diagonally and serve.

This recipe yields 1 serving.
