2 stk butter
1/2 cup shortening
3 cup sugar
5 x eggs
1 tsp coconut oil (put solid oil in micro save dish and melt)
1 tsp rum flavor
3 cup flour
1/2 tsp salt
Instructions:
Instructions: Cream butter, shortening together, add sugar and eggs and cream some more until well mixed. Add coconut oil and rum flavoring. Add dry ingredients alternately with milk. Bake in angel food cake pan at 350 degrees for 1 hour. Remove cake from pan and place on cake plate top side up.

Glaze for Cake

1 cup sugar
1/2 cup water
1 tsp. almond flavoring

Bring sugar and water to a boil, simmer a few minutes until sugar is melted. Remove from heat and stir in almond flavoring. Drizzle over cake. Cake does not have to be completely cooled, it can still be warm.

NOTE: You can get the coconut oil at a health food store. You might be able to get it at a grocery store in your area as it is a cake that came from a woman who lived in the south. It was given to my sister and she gave it to me. It is a very rich cake and not for people with diabetes like me. Of course if you just allowed for it and had just a tiny, tiny piece you could get away with having a taste of it.
