Instructions: A winning recipe from DLMs Healthy Alternative Recipe Contest 1994.
Place all dry ingredients in a large bowl and mix well. Add dates to flour mixture and toss lightly. In a separate bowl,combine egg whites, oil, vanilla and milk; beat well. Add liquid ingredients to the dry mixture and stir only until moistened. Do not overmix. Pour into paper-lined muffin cups. Bake in preheated 400F oven for 15 minutes or until lightly browned.
